Vegan French Toast

Any vegans out there who misses their French Toast?  I found the perfect recipe for you all. Since I was going plant-based, I have not made French toast, which is one of my favourite breakfasts. I wanted to make a vegan French toast without eggs and come up with my own version to share with you all. When I tried this recipe for the first time, I was over the moon because now I can finally enjoy a good french toast when I feel like it. When I served these toasts to my sister, she was rambling about how could these french toast possibly be vegan! So, you will not miss the eggs with this easy but delicious plant-based French toast recipe.

My vegan toast uses flaxseed meal instead of eggs and as the French toast cooks in the pan, it gives the same texture as if you would using eggs. The texture is perfect! It’s crispy on the outside and soft in the middle, and vanilla-scented, sweet and golden perfection!  All you need are a few simple ingredients & it will be ready in no time. So, brew your coffee and make some room in your belly for these delicious babies. I topped mine with blueberries, choc dipped fresh strawberries and maple syrup but feel free to use any topping that make you merry and bright 🙂

Ingredients,

2-3 thick bread slices
1 tbsp flaxseed meal
200ml plant-based milk (I used soy milk)
1 tsp cinnamon sugar (or 1/2 cinnamon powder)
1 tsp vanilla extract
2 tbsp plant-based butter (for frying the bread)

Method;

Add all the ingredients (apart from butter) into a bowl and whisk well until no lumpy bits of flaxseed meal is found. It is best to use a flat-based bowl and add milk by batches. Otherwise, the flaxseed meal will disappear in the bottom of the bowl and you will hardly coat the bread with the flaxseed meal.

Dip the bread in the milkbase turning both sides. It is best to use one-two days old bread.

Heat a skillet on meat heat and spread some butter on the skillet. Add the bread slices one by one to the skillet without overlapping. Cook over medium-high heat for about 3-4 minutes on each side or until golden brown. Leave the slices alone and not peek while it’s cooking. If you move it too early the golden surface can get damaged or come off the bread.

Transfer into a plate and top with you favourite berries and drizzle with maple syrup. Serve immediately.
